Two schools, and they are not the same animal: the guild's own, whose three-level year runs September to June and which has been teaching for fifty years, and a private academy in Hospitalet that flies visiting chefs in for ten-day intensives taught in English. The guild is the city's own pastry trade body, and the woman who directs its school came up through it as a student.

A professional pastry academy founded in 2012 and run out of Hospitalet de Llobregat, which says in its own words that training yacht chefs is one of its most valued specialisations, and that it built its ten-day intensive for people cooking at sea. The course is eighty hours at the bench across ten days, taught in English, working through around fifty finished products and more than a hundred and fifty sub-recipes — entremets, individual cakes, plated and catering desserts, vegan desserts, bonbons — and it is taught by visiting chefs who change with each session rather than by one resident teacher. The Barcelona pastry guild's own school, on Plaça Pons i Clerc in the Born. Its Xef de Pastisseria course is an annual one, September to June, in three levels: the basics of artisan pastry, then classical work, then the creative year. Saray Ruiz has directed it since 2024 — the first woman to run the school in its fifty years — and the three other full-time teachers came up through it as students.
